Originating from Vietnam, Nam Nuong was a delicate way of preparing pork balls for well-to-do noble families. However, in the past three decades, it has been served in every Vietnamese restaurant around the world. Lobo, inspired by its famous legend and popularity, introduces a simple but genuine method to make Vietnamese pork balls at home.

- Can make Nam Nuong and Shrimp Mousse on Sugar Cane

- For 500g pork

Recipe: Grilled Pork Skewers (Nam Nuong)

1. Dissolve the contents of this packet with 1/4 cup (60 ml.) water.

2. Add the mixture into 500 g. ground pork, knead until the mixture becomes sticky. Let stand for 10 minutes.

3. Shape into 1 inch in diameter balls. Thread the balls.

4. Grill until done or bake at 170 °C for 10 minutes.

5. Serve with rice paper sheets or rice vermicelli and fresh vegetables. 

Recipe: Shrimp Mousse on Sugar Cane

1. Cut fresh sugar cane to make 10 skewers (5 inches long, 0.5 inches in diameter).

2. In a bowl, empty the contents of this packet with 500 g. frozen shrimp. Mix together.

3. While the shrimp is still cold, mince in electric food processor until finely blended.

4. Grease your palm with vegetable oil and tightly form the shrimp paste around sugar cane.

5. Steam with medium heat for 10 minutes. Let stand for 10 minutes.

6. Deep fry in vegetable oil until lightly golden brown.

Tips: * If fresh sugar cane is not available, use chopsticks or bamboo sticks. * For the sauce; simply dissolve 1/3 cup sugar and 1/4 ¼ teaspoons salt in 3 tablespoons water and 3 tablespoons vinegar. Soak shredded carrot and shredded Chinese turnip in the sauce. * Serve with steamed rice vermicelli and fresh green vegetables.
